Ingredients

Bowl

  • 4 cups cooked quinoa
  • 2 cups grilled chicken strips
  • 1½ cups store bought Tikka Masala sauce
  • 2 cups coleslaw mix
  • 2 cups English cucumber rounds, sliced ¼” thick
  • 1 cup cooked corn
  • 1 cup cherry tomato, halved
  • ½ cup cilantro leaves
  • ½ cup store bought tzatziki sauce
  • ½ cup dry roasted chickpeas

Grilled Naan

  • 1 pkg Panaji Original Naan Minis
  • 1 tsp Tandoori Masala powder
  • 2 tbsp vegetable oil
  • Salt to taste

Cooking Steps

  • Heat Tikka Masala sauce, add the grilled chicken, season with salt to taste and heat
  • While the chicken is heating, assemble the bowls. In each bowl, place 1 cup of cooked quinoa, top the quinoa with coleslaw, cucumbers, corn and When warm, add the chicken tikka masala to the bowl. Top with a dollop of tzatziki sauce and garnish with the cilantro and chickpeas.
  • Heat up your grill or cast iron grill pan on medium high heat. Brush each naan with oil, season with Tandoori Masala and salt, then grill for 2-3 minutes per side.
  • Serve on the side of the bowl.
