Grilled Halloumi Flatbread
Halloumi cheese has a very high melting point, which makes it perfect for frying or tossing on the grill.

Ingredients
Naan
- 1 pkg Panaji Original Naan (2 pack)
- 2 tbsp olive oil
Hallouimi
- 80 grams halloumi, sliced 1/2” thick
- 2 tsp olive oil
- ½ tsp Tandoori Masala powder
Pea Spread
- ½ cup frozen peas
- ¼ cup water
- 2 tbsp yogurt
- 1 tbsp lemon juice
- 1 tbsp mint, minced
Topping
- 1 small zucchini, sliced lengthwise
- ¼ cup radishes, sliced thinly
- 1 tbsp mint
- 1 tbsp lemon juice
- Salt and pepper to taste
Cooking Steps
- Microwave peas and water on high for 1 minute. Discard the water and place peas, yogurt, lemon juice and mint in a food processor and pulse until combined but not all the peas are mashed, set aside.
- Heat up your grill or cast iron grill pan on medium high heat. Brush each naan with olive oil and grill for 2-3 minutes per side. Set aside on a separate plate.
- Coat halloumi slices with olive oil and season with Tandoori Masala. Grill halloumi slices 2-3 minutes per side and set aside.
- In a small bowl, combine zucchini, radishes, lemon juice and mint. Toss and season with salt and pepper. Spread pea spread evenly on to the grilled naan. Top with grilled halloumi slices and tossed toppings.
